Chocolate Chip Oatmeal Muffins

Chocolate Chip Oatmeal Muffins

1/2 cup           butter or margarine

3/4 cup           packed brown sugar

1                      egg

1 cup              all-purpose flour

1 tsp.               baking powder

1/4 tsp.            baking soda

1/4 tsp.            salt

3/4 cup           applesauce

1 cup              rolled oats

1 cup              semisweet chocolate chips

* can substitute raisins and cinnamon


1.   In a large mixing bowl, cream butter and sugar.

2.   Beat in egg.

3.   Combine dry ingredients; add alternately with applesauce to the creamed mixture.

4.   Stir in oats and chips.

5.   Fill greased cupcake pan.

6.   Bake at 350 degrees until firm in middle and golden on top.

Yields: 12 muffins
