7- UP Pound Cake


7-Up™ Pound Cake

1 cup                  butter (softened)

1/2 cup               shortening

2 cups                 sugar

4                          eggs

3 cups                 all -purpose flour

1 tsp.                   vanilla extract

1 tsp.                   lemon or almond extract

7 oz.                    lemon-lime flavoured carbonated beverage.

 

 

Directions

1.   Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. (I used cupcake pans with liners.

2.   In a large bowl, cream together butter, shortening and sugar until light and fluffy.

3.   Beat in the eggs one at a time, then stir in the vanilla and lemon extracts. Beat in the flour alternately with the lemon-lime soda, mixing just until incorporated.

4.   Pour batter into prepared pan. Bake in the preheated oven for 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool on a cake rack for 30 minutes before removing from the pan.

Yields: One Bundt cake or 24 cupcakes
